The Nutrition Behind This Recipe

  • Chicken thigh is underrated. It’s higher in fat than breast, but that fat is what gives it flavour and keeps it juicy. It’s still an excellent source of protein to keep you full and support muscle, and it’s much more forgiving to cook than breast, meaning less chance of dry, rubbery chicken.
  • Rice is not the enemy, especially basmati. Basmati rice is a low GI carbohydrate, meaning it digests more slowly and gives you a steadier release of energy rather than a sharp spike and crash.
  • The marinade works smarter, not harder. Lemongrass, soy, fish sauce, garlic and honey create a flavour-packed marinade that’s low in calories but big on taste, no heavy cream sauces or excess oil needed.
  • Turning it into a bowl packs in more vegetables. Lettuce and cucumber add crunch, hydration, and fibre, and turning it into a bowl makes it effortless to get those extra serves in. More veg means more fibre, and more fibre means a happier gut and a fuller stomach.

The Recipe 

Ingredients (Serves 4)

  • 500g chicken thigh
  • 500g basmati rice (cooked)
  • 4 cups lettuce
  • 300g cucumber
  • 60g light mayo

Marinade 

  • 50g lemongrass paste
  • 2 tbsp light soy sauce
  • 1 tbsp fish sauce
  • 2 cloves garlic, minced
  • 1.5 tbsp honey
  • Squeeze of Lemon juice

Method 

1. Cook the rice per packet instructions.

2. Lightly salt both sides of chicken thigh.

3. In a bowl, mix all marinade ingredients.

4. Add chicken, toss to coat (marinate 15–30 min if you can).

5. Place chicken in a lined air-fryer basket, adding in any leftover marinade.

6. Air-fry at 180 Β°C for 22–25 min, flipping halfway, until cooked through.

7. Assemble bowl with rice, lettuce, cucumber, and a drizzle of mayo.

Tips to Make It Even Better

Don’t skip the marinating time β€” even 15 minutes makes a noticeable difference to the depth of flavour. If you can prep it the night before, even better.

Pour the leftover marinade into the air fryer basket β€” it caramelises around the chicken as it cooks and creates the most incredible sticky glaze.

Trim the excess fat off your chicken thighs before marinating β€” it takes an extra minute but removes the extra saturated fat which means better for your heart health.
