1. Cook the rice per packet instructions.
2. Lightly salt both sides of chicken thigh.
3. In a bowl, mix all marinade ingredients.
4. Add chicken, toss to coat (marinate 15β30 min if you can).
5. Place chicken in a lined air-fryer basket, adding in any leftover marinade.
6. Air-fry at 180 Β°C for 22β25 min, flipping halfway, until cooked through.
7. Assemble bowl with rice, lettuce, cucumber, and a drizzle of mayo.

Don’t skip the marinating time β even 15 minutes makes a noticeable difference to the depth of flavour. If you can prep it the night before, even better.
Pour the leftover marinade into the air fryer basket β it caramelises around the chicken as it cooks and creates the most incredible sticky glaze.
Trim the excess fat off your chicken thighs before marinating β it takes an extra minute but removes the extra saturated fat which means better for your heart health.
